HAPPY ST. PATRICK'S DAY!



The corned beef is in the crockpot and in a few moments I'll be making some green cupcakes. Of course, we'll be having cabbage, green mashed potatoes, peas (my gang loves peas!), and mint chocolate chip milk shakes with our St. Patrick's Day dinner.

Here's the recipe I use. I cook the corned beef in the crockpot on low all day and then take it out and bake it for 30 min. at 350 degrees, with the glaze brushed on.

1 corned beef brisket (3 to 4 pounds), trimmed
1 medium onion, sliced
1 celery rib, sliced
1/4 cup butter
1 cup Domino® or C&H® Pure Cane Dark Brown Sugar
2/3 cup ketchup
1/3 cup white vinegar
2 tablespoons prepared mustard
2 teaspoons prepared horseradish

What a strange night I had. My dreams were entertaining that's for sure... Just really weird... I woke up relieved my real life is completely boring and predictable. Lol!

N. wore his green "This is my lucky shirt" to school with a green checked buttoned shirt over it. He looked so cute. Didn't catch on that it was St. Pats till I told him as I kissed him goodbye. His whole face lit up. He's happy too that the Tooth Fairy brought him and his older brother each $1 for the teeth they lost. Yes, even at 16 J. has a few baby teeth left.... I think there's one more he's waiting on.

Speaking of J. he's getting ready for Jr. Prom! He asked his friend K. if she would go with him and she answered yes, so he's pretty thrilled about that. They're just good friends and on the same track team, neither interested in dating the other but that's okay! It's funny how so many of J.'s friends, both guys and girls are very close but not really interested in dating yet. They hang out together and it's much different than when I was in high school where it was very clear who was interested in whom and there was constant flirting and angst. Not so with these kids. They're very comfortable around each other and I notice they behave and interact more like siblings than friends or potential bf or gf.

This morning there was a HUGE black kitty in the driveway across the street. I'm assuming he was a male, but hey you never know. I have no clue how many cats live in that house, but I see different ones lying in the front window sometimes, so it makes me curious about them. He was a cutie tho, walking real slow back and forth in the driveway and stopping now and then to groom himself. I think he thinks he's in charge.

The birds around here~ cardinals, robins, bluejays~ are very active right now. Very loud and flying low, mostly in pairs with a third wheel in hot persuit yelling "don't go with him! He's not the more attractive fellow, look at me!" The mourning dove couples, sitting quietly in the grapvines, watch them go bye and just shake their heads.
